A Cocktail in Honour of Cherry Blossom Season

The Vancouver Cherry Blossom Festival runs until April 23, marking the return of the magical blossoms that have blanketed the city every spring since the Japanese cities of Kobe and Yokohama gifted the Vancouver park board 500 trees in the 1930s. To celebrate the city at its most sublime, Gotham Steakhouse and Bar has created the Tokyo Rendezvous, a sweet, pink cocktail that honours the ancestral country of Vancouver’s cherry trees.

Ingredients

1.5 ounces hibiscus-infused Roku gin

.5 ounce Choya yuzu liqueur

1 ounce lemon juice

.5 ounce Giffard hibiscus syrup

2 dashes lavender bitters

Sugar for rim

Method

Add all ingredients to a shaker filled with ice.

Shake hard to the count of 5.

Cover half of the coupe’s rim with sugar.

Double strain into the coupe.
