Laprise released his first book, Toqué!, this past October, giving insight on the career philosophies and inspirations that brought him to where he is today. The 444-page book features recipes from his Montreal restaurants Toqué! and Brasserie T!, such as veal sweetbreads and endives with smoked butter of eel, along with lessons for the amateur foodie, including a tutorial on how to use 100 per cent of a tomato. Readers will also be taken on a culinary expedition through forests, rivers, and the open sea by Dominique Malaterre’s photography to experience all the flavours the world has to offer.
