Recipe of the Week: St Martin Sweet Potato Cake

St Martin

Saint Martin is an 88-square-kilometer island in the Caribbean Sea known for its beautiful beaches and friendly welcome. This week, NUVO brings you a recipe courtesy of the St. Martin Tourist Office for sweet potato cake straight from the island paradise, so you can have a taste of sunshine at home as winter drags on.

 

Ingredients

1.5 kilograms sweet potato

3 eggs

100 grams sugar

1 vanilla pod (Scrape out the seeds before using)

1 teaspoon cinnamon

200 millilitres milk

100 grams butter

1 tablespoon rum

 

Method

Peel the sweet potato and cut into even sized cubes.

Boil for 45 minutes then drain and set aside.

In a bowl whisk together the eggs, sugar, vanilla, and cinnamon.

Add the milk.

In a blender, purée the sweet potatoes.

Add the egg, sugar, and milk mixture to the blender and mix.

Add the butter and rum and blend until smooth and creamy.

Pour the mixture into a greased baking tin and bake at 175°C (350°F) for 45 minutes to an hour.

Leave to cool before serving.
