Your Next-Level Spaghetti Recipe

Spaghetti with kobe-style meatballs from Trattoria.

Glowbal Group’s Trattoria restaurant chainlet is well known for bringing consistent, high-quality Italian fare to different parts of the Lower Mainland. This week NUVO is bringing you the most classic dish from Vancouver’s most consistent Italian joint: spaghetti and meatballs. However, by incorporating some of the finest meat there is, kobe-style beef, into the meatballs, this recipe goes above and beyond Mom’s spaghetti.

 

Ingredients

For the kobe-style meatballs:

5 pounds ground kobe-style beef

2 large eggs

1 tablespoon chili flakes

1/2 cup Parmesan cheese

2 cups panko bread crumbs

4 tablespoons Italian parsley

2 tablespoons crushed garlic

2 tablespoons black pepper

2 tablespoon sea salt

1 chopped onion

1 tablespoon paprika

1 cup chicken stock

For the pasta:

1 teaspoon chopped garlic

1 teaspoon chopped white onions

1 tablespoon extra virgin olive oil

2 ounces tomato sauce

1/2 teaspoon chili flakes

3 kobe-style meatballs

1 teaspoon unsalted butter

1 teaspoon chopped Italian parsley

1 teaspoon fresh basil

1 teaspoon fresh oregano

7 ounces parboiled spaghetti noodles

1 tablespoon Parmesan cheese

1/2 teaspoon sea salt

2 teaspoons ricotta cheese

 

Method

For the kobe-style meatballs:

Combine all ingredients in a large bowl and mix.

Form meatballs with gloved hands to reduce heat transfer.

Place on a tray and season with salt, pepper, and paprika.

Bake at 325°F for 25 minutes.

For the pasta:

Sweat garlic and onions in olive oil in a saucepan.

Add tomato sauce, chili flakes, and meatballs.

Ensure meatballs are coated with tomato sauce, then place in a pasta bowl.

Add butter and fresh herbs to saucepan.

Warm parboiled pasta noodles in cooking water for 20 seconds.

Remove noodles from pasta water and put into the tomato sauce with a little of the pasta water.

Cook noodles in sauce to form a nice slurry.

Finish with butter, olive oil, and Parmesan.

Plate while rotating tongs to ensure a tight presentation, and pour sauce over the top.

Finish with ricotta cheese.
