Recipe of the Week: Tex Mex Martini
A southwestern spin on a classic cocktail.
Vancouver bar the Cascade Room has provided NUVO with bartender Matt Cardinal’s recipe for a Tex Mex Martini. A homemade chili lime cordial adds heat and acidity.
Tex Mex Martini
Ingredients
For the chili lime cordial:
4 cups water
4 cups white sugar
4 chili peppers, thinly diced
4 limes, juiced and zested
For the martini:
1 ounce mezcal
1 ounce Tito’s vodka
½ ounce olive brine
½ ounce lime juice
¾ ounce chili lime cordial
Salt (for martini glass rim)
Ice
Cilantro for garnish
Method
For the chili lime cordial:
Bring water to a boil in a large pot.
Add sugar, chilis, lime juice, and zest.
Boil until sugar clarifies.
Fine strain and chill.
For the martini:
Salt the rim of a martini glass.
Place mezcal, vodka, olive brine, lime juice, chili lime cordial, and ice in a cocktail shaker.
Shake until chilled (around 30 seconds).
Strain into a martini glass.
Garnish with a piece of cilantro to add aroma.
