Madam Geneva Cocktail

Autumn sips.

Award-winning mixologist and sommelier Lauren Mote and chef Jonathan Chovancek create seasonal cocktails featuring their handcrafted Bittered Sling Extracts

This cocktail is inspired by the time period at the end of the 18th century nicknamed the “Gin Craze”, a time when there were no excise taxes imposed on gin produced in the United Kingdom. This caused a kind of mass hysteria, and so taxes were imposed and production was regulated shortly thereafter. “Madam Geneva” was another term coined for the era.

Ingredients 

45 ml Bombay Sapphire East London Dry Gin
15 ml Aperol
15 ml Fino Sherry
22 ml Lemon Juice
22 ml Apricot Syrup
2 dashes Bittered Sling Kensington Dry Aromatic Bitters

Method

  1. Shake all ingredients with ice until well chilled.
  2. Double strain into a chilled cocktail glass.
  3. Garnish with a lemon peel. Express the oils over the top surface of the cocktail, then place the peel in the glass.
