Hello Nori’s newest location, Hello Nori Signature, has opened in Park Royal with an expanded menu featuring dishes with locally sourced ingredients as well as from Canada and Japan. The fourth location in Vancouver, after a recent flagship opening in Toronto, Signature has the largest bar seating (38 seats), the most tables, and an extensive drink menu of crafted cocktails and rare Japanese whiskies. Also different from other locations is the ability to book reservations.

Expanding the menu from other Hello Nori locations, new offerings include dishes such as bluefin tuna, wagyu beef and soft shell crab karaage, and drinks including cocktails and rare Japanese whiskies, alongside the well-known hand-rolled sushi and house-branded sake.

Arriving warm and with a crunchy bite, hand rolls are meant to be enjoyed within seconds of the hand roll touching the table, before they cool down and the nori loses its texture. Made with brown rice instead of white, there is less sugar, which helps alleviate feelings of heaviness after eating mass amounts of sushi.

The new spot also aims to have the widest variety of rare Japanese whiskies and soon the widest variety of whisky flights, according to Isaac Oliver, director of restaurant operations. “For example, we have six different Nikka whiskys. Although many guests may have heard of Nikka, they might not know that there are this many different varieties and variations of that brand,” he says, adding that he’s looking to offer Nikka, Satori, or Yamazaki flights on the Hello Nori Signature menu—”an opportunity to try them all.”
