Roasted Potato Salad With Blue Cheese

Vegetarian or not, you can never go wrong with potato salad, especially one prepared from the world’s best recipe. Salad is one of those quick dishes that carry both plenty of nutrients and the yummiest taste. To give you an idea, a typical salad contains loads of vitamins A, B, C, E, and K, as well as nutrients and antioxidants such as beta carotene, folate, fibre, and calcium.

In this case, potatoes are rich in potassium, folate, vitamins C and B6, proteins, carbs, and a little sugar. Adding blue cheese to your salad, lets you enjoy a great taste and also some health benefits, one more reason to try it in your kitchen.

Cooking time: 45 minutes

Ingredients

3–4 medium potatoes, roughly chopped

2 tablespoon butter, melted

¼ teaspoon smoked paprika

¼ teaspoon dried dill

½ teaspoon garlic powder

Salt

¼ cup mayonnaise

¼ cup sour cream

1 medium onion, diced

2 spring onions, chopped

3–4 pickles, sliced

3 ounces blue cheese, crumbled

 

Preparation

Preheat the oven to 350°F.

In a medium bowl, add potatoes, butter, smoked paprika, dried dill, garlic powder, and some salt. Mix well to coat each piece with butter and spices. Transfer to a large baking dish.

Bake for 45 minutes or until potatoes are completely done and tender. When done, remove from the oven and cool to room temperature.

Meanwhile, in a small bowl, combine mayonnaise and sour cream. Optionally, sprinkle with some dried dill. Set aside.

Add the remaining ingredients to a serving bowl and top with cooled cooked potatoes. Add the prepared dressing and mix well.
