If you like piña coladas…then you will definitely enjoy the Avocado Pineapple. A health-forward version of the popular bar drink. Just put the lime in the coconut and blend it all up.
Yields 16 oz
½ frozen avocado (scoop a half avocado out of its skin and put it in the freezer overnight)
2 cups cubed pineapple
¼ cup coconut milk
1 tbsp coconut nectar
1 large squeeze of lime
A pinch of raw vanilla powder
3–4 ice cubes (we like to freeze coconut water)
Fill to 500 mL with coconut water
Blend all the ingredients in a blender until smooth and creamy, then serve.
