Kavita Is a Thoughtful Expression of Indian Cuisine

With nearly innumerable flavours, textures, and combinations, the curries, puris, and pakoras of India are amongst the most popular dishes in Canada. They are also woefully overlooked in the world of fine dining. Now, thanks to chef Tushar Tondvalkar and his new Vancouver restaurant, Kavita, Indian food is getting a fine-dining turn. Located in the city’s Mount Pleasant neighbourhood, Kavita was born out of Tondvalkar’s experiences cooking in Mumbai, Bangkok, and now, Vancouver. Bringing together Canadian ingredients and Indian techniques, it’s a fusion of flavour that proves Indian food can be more tasteful than takeaway.
